This most prized portion of the of the plant is merely steamed and dried. In most cases the tips are "white/silver" and hairy in appearance--denoting a "bud"( a forming leaf ).The resulting brew is white in color due to a low chlorophyll content (remember--this is a baby leaf) and low in astringency (low tannins).Liquor is light with a slightly sweet flavor without the grassy notes of most Green teas.

white tea is low in caffeine and super high in polyphenols--some claim as much as 30x more potent than vitamin C or E and 10x that of green tea!!!
